COGNAC SUGAR PLUMS

(Makes 4 dozen)

Melt 6 oz semi-sweet chocolate chips

Stir in: 1/2 C sugar, 1/4 C corn syrup,  1/3 C cognac

Stir in: 2-1/2 C finely ground vanilla wafers,  1 C finely chopped pecans

Roll into 1-inch balls. Roll in sugar

If the mix doesn’t hold together or begins to dry out, add a splash more cognac.

Store in an airtight container. Improves with age.
